Lockdown Loaf Challenge
Banana and Coconut Loaf 🍌 🌴
This recipe is Gluten Free and Dairy Free, post pics of your results and tag us
250g Gluten Free Flour
100g Coconut Flour
3t Baking Powder
1t Baking Soda
1/2 t Cinnamon Powder
4 Ripe Bananas 🍌
80ml Coconut Oil Melted 🌴
100ml Coconut Milk 🥥
2 Eggs 🥚
Sift all dry ingredients
Mash 3 Bananas and keep one for later. Melt Oil in microwave combine all wet ingredients with banana and mix.
Fold Dry’s into Wet Ingredients, Place half of mix in loaf tin, peel 4th banana and cut in half and place on mix as per picture. Place last of mix on top and place in oven @ 170 degrees for 45-50mins.
