Our Sustainability Story at The Fat Duck

Award winning dining - the fat duck te anau

At The Fat Duck, sustainability isn’t something we’ve added on — it’s simply how we like to do things. Living and working in Te Anau makes you appreciate the land, the people, and the environment around you, and we want our business to reflect that. Our approach to sustainability is woven into our everyday decisions, from the ingredients we choose to the suppliers we work with.

This is what Fat Duck sustainability looks like for us: thoughtful sourcing, less waste, and a genuine respect for Fiordland.

Working With the Region’s Best Producers

Good food starts with good ingredients, and we’re lucky to have incredible producers right on our doorstep. We choose to work with local suppliers who care about quality, animal welfare, and the long-term health of our region.

Our beef comes from Alliance Group, our lamb from Burwood Station, our venison from Fare Game, and our seafood from Fresh is Best, Harbour Fish, and Akaroa King Salmon. These relationships mean fresher ingredients on your plate and fewer food miles along the way.

Sourcing seasonally also helps us keep our menus fresh and reduces unnecessary waste — and honestly, seasonal food just tastes better.

Supporting Local Every Step of the Way

Being part of a tight-knit community means supporting the people who support us. By choosing local farms, fisheries, and growers, we help keep small businesses thriving and money circulating in the region. It also ensures that the flavours on your plate truly represent Fiordland and Murihiku.

For us, sustainable dining in Te Anau isn’t only about the environment — it’s also about looking after the community around us.

Reducing Waste Where We Can

We’re not perfect, but we’re always working to do better. In the kitchen, we plan our menus carefully so we use ingredients efficiently, reduce waste, and repurpose trimmings wherever possible. We’ve also cut down on single-use plastics and improved our recycling systems.

Every small improvement adds up, and we’re committed to making steady progress year after year.

Be Part of the Journey

Every time you dine with us, you’re supporting local producers, responsible sourcing, and a more sustainable future for Te Anau. If you ever want to chat about where your food comes from, our team is always happy to share the story.
